Recipe: Vegetarian Quinoa Stew

Vegetarian Quinoa Stew | Kelly Maia NutritionBefore starting my new job, I took a day off to cook. I was looking for something awesome that I could freeze in case I didn’t have any leftovers to bring for lunch.

I found a great recipe on the Oh She Glows website, called Husband’s Healing Stew. I made a few modifications (my adaptation is posted below), but refer to the original recipe for the real deal!

It turned out really tasty and it was surprisingly filling. The cinnamon added an interesting flavour as well. I will definitely be making this again.

Vegetarian Quinoa Stew

1 tbsp extra virgin olive oil
2 small sweet onions, chopped
3 green onions, chopped
3 garlic cloves, minced
1 tsp ground cinnamon
2 small zucchini, chopped
1 yellow pepper, chopped
1 red pepper, chopped
3 carrots, peeled and chopped
4 cups organic vegetable broth
4 medium sized tomatoes – blanched, peeled and diced
1 cup uncooked quinoa

1/2 cup cooked/canned pinto beans (or bean of choice)
2 tbsp minced fresh parsley
1/2 tsp garlic powder

 *The Oh She Glows version has more ingredients and other spices that I don’t personally like. I suggest you check out her recipe too, to see how to take this recipe to another level.

Directions

1. Add olive oil, sweet onion, green onion and minced garlic to a large pot. Cook on low-medium heat until onions are translucent.

2. Stir in cinnamon. Add chopped zucchini, peppers, carrots and cook for another 5 minutes.

3. Stir in the diced tomatoes, vegetable broth and quinoa. Bring to a boil. Then simmer on low-heat for 20-25 minutes (until carrots are cooked through). Add a bit more broth or water if necessary and reduce heat when needed.

4. Add the garlic powder and fresh parsley to taste. Cook for another few minutes and serve.

 The best part about this recipe, and the reason why I tried it, was that you can freeze the leftovers.
