Recipe: Nut Butter Energy Balls

September 1, 2015 by Kelly

Nut Butter Energy Balls | Kelly Maia NutritionI love energy ball recipes because they’re all so similar, yet so different. As long as the stuff sticks together, you’ve got yourself a successful snack. You can add whatever the heck you want to tailor them to your liking – I personally love adding chia seeds and hemp seeds. Today I’m sharing my go-to recipe when I want to make a quick, filling and energizing snack!

This recipe makes about 20 balls, and takes a total of 15 minutes. They’re dairy free and can be gluten free if you buy gluten-free oats.

Ingredients:

2 cups quick oats (buy gluten-free quick oats if necessary)
1/2 cup natural peanut butter
1/2 cup natural almond butter (you can do a full cup of either nut butter, but I like mixing them)
1/4 cup pure maple syrup
1 tbsp melted coconut oil
1/4 cup flax seed meal
1/4 cup shredded unsweetened coconut
2 tbsp chia seeds
2 tbsp hemp seeds
1/2 tsp ground cinnamon

Directions:

Mix all ingredients. Chill in the fridge until firm. Roll into balls.

You can store these in the fridge for up to 1 week, or keep them in the freezer and take them out a few minutes before eating.

Happy snacking!

This is exactly what I need. I’m pretty good with eating healthy, my only problem is the snacks. I started making sweet potato brownies, which i LOVE, but need another recipe to mix in. I’m definitely going to try these!

Glad you found this useful! I find snacks are the hardest things to change… It’s so easy to grab chips, crackers, muffins, etc.. As long as you prep some food in advance, you’re golden! Hope you like these energy balls 🙂
